Vinification
Cold pre-fermentation maceration with the skins for 12 hours. After pressing the skins the alcoholic fermentation in tanks of stainless steel-thermo-conditioned at 16 °. Before and after malolactic fermentation in spring numerous batonnages with yeasts and indigenous bacteria give longevity and complexity. None clarification or filtration

Enveloping and fresh on the nose with notes of green hazelnut, mandarin and pink grapefruit alternating with more vegetable scents
Tasting Notes
Smooth and delicate, in the mouth it is also appreciated for its complexity and structure, persistence and a bitter finish that recalls the jujubes

Excellent with all fish-based preparations, gives strong emotions with dishes of intense flavors, of sea in particular
